Bonavista Fish Cakes

Ingredients:


1 cup (250 mL) cod, cooked and flaked
1-1/2 (375 mL) mashed potatoes
1 tsp. (5 mL) finely chopped onion
Salt to taste
Oil for frying

Preparation:

Blend together fish, mashed potatoes, and onion. Add salt. Divide into 6 equal potions, form balls, and pat into cakes. Fry cakes in a hot skillet until golden brown on both sides. NOTE: If desired, substitute saltfish. First soak, soak overnight and cover with fresh cold water and boil for 20 minutes. Omit salt from recipe.
