Fresh-Cabbage Pickles





2 lb (1 kg) cabbage
2 lb (1 kg) onions
1 qt (1 L) vinegar
1 cup (250 mL) sugar
1 tsp. (5 mL) salt
1 tbsp. (15 mL) curry powder
1 tbsp. turmeric
1 tbsp. (15 mL) dry mustard
1/2 cup (125 mL) flour
1/2 (125 mL) water


Chop cabbage and onions until very fine. Add vinegar and boil for 10 minutes. Add sugar and salt. Combine spices and flour, adding water to form a paste. Stir paste into boiling cabbage and boil for 20 minutes. Pour into hot sterilized jars and seal.
